Various thoughts and updates

Last night TWS and I went out on a date. We have the single most phenomenal babysitter EVER. Her name is Michaela. She is incredibly poised, looks adults in the eye in an open and not sullen manner, and washes the dishes when she babysits. Honestly, I would adopt her if I could!

Our dates are very very mundane. And I love that! We go out to supper, either go shooting or go shopping, and usually end up at the bookstore getting Godiva Choc Cheesecake for me, and whatever he wants.

I love the comfortableness of our relationship. I am thoroughly blessed.


We bought some Christmas presents, including something for my folks. I want to tell you all about it, but my mom might accidentally read the blog and that would blow the surprise!

I am not sure if all y'all know, but I headcover. You have probably seen it in some of the pics I have posted. I do not feel that one must always headcover. And last night, because we were on a date, I considered not covering (not that TWS cares one way or the other, but frankly my hair was kinda cute!). I decided to put it on anyway, and I am glad I did. I ran into our neighbors who seem very nice but are most definitely witches (as in, that is what they proclaim as their religion, not that I am being catty). She had on her cape and amulets or whatever, and I was standing in my headcovering. We said hello briefly, I talked to her husband for a moment, and then it was over. However, I was very thankful to be wearing my faith when I ran into someone who was wearing their beliefs. I was thankful that I was ready "in season and out of season...". It was the Holy Spirit who arranged me to be prepared...frankly I was just tickled with my hair!

(Thank You Lord for making me ready for that one brief moment where I could be a witness for You!)

Speaking of hair, the no poo is going REALLY well. I still use mane and tail conditioner, and it still helps if I am under the water when I scrub. But I am very much enjoying my hair. I think I will keep with the conditioner only regimen.

Back to my folks coming to visit....I am trying to figure out what I can get done ahead of time! I am very eager to make a lot of candy this season. SHAW and I have been pouring over blogs of numminess. I want to make pies, cakes, etc. However, I am also finding out that after the first two days of looking at very sweet, sugary, rich foods, I am finding myself actually wanting to bake and eat some very simple bread.

So I have baked bread and dug out my science experiments (AKA my sourdough starters) from the back of the fridge and am going to try to get them going again. If I cannot, then I still have time to order starter from king arthur (the food blog there is beyond!). My plan when my folks visit is to have very simple breakfasts of cheese, bread, fruit. That will keep our blood sugars from going so wonky, and will also free up the rest of the day for numminess :-).

I have found that eating protein only for breakfast (or something with a TON of fat in it), feels so much better. No crashes, no spikes. This is a FAR cry from what i have preferred my whole life. Even if I woke up at 2 in the afternoon, I wanted something light and sweet before eating anything substantial. Now I pretty much have either chicken, cheese, pork or moose for breakfast. Just that and coffee. Took me a while to get used to it, but man, the day goes so much better that way!

Now, one odd thing is that if I eat something that is SUPER high in fat, like donuts, I am not hungry for hours and hours. If I eat waffles or pancakes or diet shakes, I am hungry in about 20-40 minutes. But donuts keep me going to past lunch. Maybe because your body wants fat for breakfast? I don't know. I just know that donuts do the trick. I have even thought of going on a donut diet! I knew a lady who lost 40 lbs eating only chocolate. She was even on one of those morning shows! Probably not the healthiest, but MAN what a nifty way to diet!

Speaking of food, I have some left over chicken from Chilis with my name on it just crying out to me in the kitchen!

Bits and Pieces....

My wonderful, beautiful sisters!!!

Just a few bits and pieces....

1) The Bazaar: ACK! Only three more days to work on the aprons!!! :-) I almost have enough aprons done to take pictures of, if anyone is still interested in seeing them.
--After I had been scouring Jo Ann's for I have no idea HOW long, The Wonder Sweetie found some stickers that will be perfect for sealing the soap for the bazaar.
--Precious heart has her earrings she is going to sell all bagged, and her hand lettered, crayoned sign all ready (she is such a cutie pie!). She is REALLY excited!

2) Nuts for donuts!! I made donuts the other morning with biscuit dough. I am sure everyone does this, and I have done it before, but I had forgotten how easy and cheap it was! Everyone loved them and they will save us a ton of money (we like donuts on Saturday morning ). I made chocolate icing, glaze, and maple. The chocolate did not turn out right--I think we need some chocolate flavoring in there to REALLY make it a good, deep chocolate flavor. Or maybe just a bit of coffee to sharpen the flavor some....Any suggestion? The maple and the glazed were a HUGE hit though.

3) Prayers Please! Need prayers for a cousin's husband of mine and their family. He was hunting in a tree stand, fell out, and broke both ankles and both wrists, as well as various other bones!! He had taken a class on how to fall, but that does not help when you are that far up. He was alone and had to crawl on his elbows and knees to get to his truck!!! God have mercy! He was medevac'd out and is recovering, but I know that the road is going to be tough for this active man. Please pray blessings, peace, quick healing, and calmness on him, my cousin, and their children.
**NOTE! Tell your men to WEAR A HARNESS when hunting in tree stands! There are THREE (count em, three) men between my family and The Wonder Sweetie's who have fallen out and have had serious injury over the years. No excuse not to wear a harness.

4) A Toasty Fire I think today is PERFECT for stoking up the woodstove! It is zero degrees this morning!!! We had a Chinook (a warm wind) blow through on Saturday, melting our previous snow. Then it started snowing that night, so we have at least 4 inches of fresh new snow!

5) Calories Wanted! What are the most calorie packed foods you can think of? Little Man just came off of a growth spurt, so his eating is way back down. But he keeps growing UP, not OUT and he is rail-thin. Maybe it is winter coming, or maybe the southern mother in me that wants to see him a little more healthy, but I am determined to get a pound or two on him.

6) Your Name Is Safe In Our House-- I have that posted on my desk, and I reread it this morning. It is such a wonderful thought--that even when you are not at someone's house, that you are still "safe" from gossip or slander. I have it posted because it convicts me to make sure that I am not gossipping (even in the name of "information" or "venting" or whatever).

7) Election Selection: Ladies, make your choices of who you are going to vote for in ANY election CAREFULLY. Do not be swayed by words, nor by party lines. The Bible says that by their fruits you shall know them--look to the fruits of those whom you are considering and see if they are godly or not. Of course, no one is perfect, but there are some issues that are just "deal breakers" in terms of what the Word says.
We all have special issues that we want addressed, but we cannot allow ourselves to be persuaded by words that we want to hear--we have to make sure that we are not like the weak willed women in the Bible who are gullible (2Tim 3:6), nor like those who have itching ears (2 Tim 4:3). We women CAN be especially swayed by emotions, so we have to be EXTRA careful to use sound doctrine in everything. Do research on any and all candidates from president of the PTA to president of the USA.
As for me, I have not decided who to vote for. I know a few whom I cannot vote for due to research I have done, but do not know who I might vote for.

A note....

My wonderful sisters, given to me in grace.....

You know, I seem to follow deep posts with lighter ones. :-)


You may not know that I do not have any biological sisters. I have a brother (whom I love DEARLY...he is definitely the golden son of the family :-) ). But I sort of have had a little desire to have a sister, especially in these later years.


But then I realized that I HAVE sisters. I have sisters in Christ. Now, to many, that is just words "Brother Joe and Sister Sue". But to me, those are NOT just words. To me, that is a promise, a blessing. I have sisters! I have many sisters!


I have Sisters in Christ who are also related to me in some way (Jeninlaw, Colastie, Precious Heart, among others). I have Sisters in Christ who are also friends of my heart. And I have Sisters in Christ whom I have never met, but who I still ponder and consider and pray for.

That makes me happy :-).

I made an incredible recipe the other day out of a cookbook called "Just 4 Things". I got it from Jo Anns (for some reason, craft stores seem to have great cookbooks that are cheap and colorful--my kinda cookbook!). It was a roast that used a lot of onions and then a Guinness Stout and cooked for hours. I used an arm roast, which is pretty tough I think normally (as far as I know it is anyway....i am SO bad about knowing which meat cut is good!). But this recipe made it literally melt in your mouth. It was altogether pleasant!

I am eager to get this book-type thing about anxiety disorders (OCD, panic disorder, and chronic anxiety disorder, etc) set up. I am going to try to get copies printed, but I also want to put everything on the web. The Lord healed me for free, and I want to provide the information He gave me for free to others. I am not sure if a website or a blog is better. I am not sure if it is better if I restrict it to those who pm me first OR if I should just leave it out in public. I am not sure if I should just have the website with no posting, or if I should have a forum as well (forums can be pretty touchy.). I have no idea how the best way is to present this information, and would gladly take input if anyone has a suggestion.

We got our first snow this weekend. Not enough to play in, but enough to let us know that winter is here :-). I am excited about building fires in the woodstove. I really love that! We homeschool in that room, and my sewing machine is there, so it is all tucked in and cozy, a room for the most blessed of homemaking and home keeping and home experiencing. I just need a (very small) loveseat to go in there because we do not have any really comfortable seating except a rocking chair.

Please pray for Colastie and The Colonel as they travel to get more tests done on Colastie. The Lord has been working in our lives with Colastie's illness for years, and the blessings have been too numerous to count! Please pray that He will continue to give her improving health for many years to come!

I cannot wait to try my tomatoes that we finished inside. I have some tiny transparent yellow ones, some very green (they are supposed to be green!) ones, a dark burgundy one, and a few red ones that are not smooth, but are sort of ...... can't describe it. Kind of pleated looking.

OH! And I went out and dug up potatoes! I use potatoes as bedding plants because they are cheap and big lol. Frankly I was about out of giggles for how un-summerlike this summer was, but TWS told me that I needed to go dig up the potatoes and see what there was. Yeah well....sigh....

So one evening, he dug up a few and he got several potatoes! Then i knew I was not getting out of this without me getting in there and digging up a few. So the other day I dug up as many as I could. WOWOWOWOOWOWOOWOW! What a bountiful harvest of yukon gold and purple potatoes! And digging for them was actually kinda fun :-). It was like a treasure hunt. Now, when you plant a potato, at least up here, the one you plant sometimes just turns into icky goo....ugh. So it was a high stakes treasure hunt--would I find a little purple gem? A bit of yukon gold? Or gooey toxic slime? I wore gloves lolol.

Mostly the dirt did not stick to the potatoes, so when you unearthed them, they looked so pretty! It was really a blessing. Now I have no idea what to do with them! I do not like mashed potatoes, and these are too small to cut into french fries. But I think I am going to dice them and oven roast them...the family likes that :-).

Ok, my dear sisters, it is time for me to get BUSY. I have some sewing to do! OH that reminds me! Many years ago I used to make and sell soaps, milk bath, bath salts, etc at bazaars around here. I dressed up in costume (the one I wore to the Victorian tea). It was fun but hard work. Up here there is a really independent spirit, plus not a lot of turn over in people. So after the novelty of you wears off, the same people who go to the same bazaars know what you sell and may not come by the table to see if you have anything new. We stopped doing this a couple of years ago. Just was not worth the hassel of doing the bazaars.

BUT I have one customer who has been faithful all these years. Her husband, apparently, does not want to use any soap but the one I make (it is REALLY REALLY moisturizing. I mean REALLY). So a couple times during the year, she buys whole batches of soap from me. :-). She just recently got a couple of other people buying the soap as well! I had also mentioned to her on the phone that I was going to do a bazaar. When I delivered the soap to her she was SO excited! She said "If you don't mind, I want to volunteer to sell the soap for you at the bazaar!". She had told lots of people that that was her plan! I felt so bad when I said "Ummm.....I am not selling soap at the bazaar, I am selling aprons.". She looked stunned! I said "But you are my only customer!". We had a good chuckle about that, and she informed me that I do not do a good job of selling my soap and that she needs to sell it for me because I am too modest about it, but she has no problem gushing over it to other people--she cracks me up! :-)

SO....it looks like I might be selling aprons at one end of the table and making soap for her to sell at the other end! She has so much energy, it will be a blast to have her keeping me company :-).

So I need to get to sewing the aprons. I am really excited about them because I have not seen anything similar, even online! We will see how they go at the bazaar! If they do not sell, people can expect a lot of aprons at Christmas lolol. :-).

McDonald's Musing....

My beautiful sisters!

The other day we got McDonalds for supper. It has been literally months since we have done that. I am not adverse to fast food per se--fried chicken in any form (nuggets, strips etc) is one of my favorite things! And french fries!

However, something was very odd. Because we had been eating at home for so long, and because any eating out I have done has been either a local take out pizza place or an occasional meal at Chili's, my taste buds must have been used to home cooking.

The first thing that I noticed is that the food tasted odd. I am not saying it tasted different, I am saying it tasted ODD. Now, again, I am not a food snob--I LOVE fast food, though for cost it is just too pricey. However, honestly, the food tasted fake. I remember thinking "this tastes like it is food and then something else added to it.....something NOT food.". It was not that I was tasting different spices or seasonings. It was actually like eating food mixed with crayon or something. There was something out of place. Like eating food off of a soapy dish, or licking your fingers if you had used hand sanitizer or bug spray. Just that taste where you know that something is not food.

It did not taste BAD at all--in fact, I would have loved some more!! It just tasted....fake.


Then almost immediately after supper that night, my tummy got very full of air--so much so that it was visible (ok, even more so than usual! lol). It did not bother me much, but was just annoying. I took some gas tablets and everything got back to normal.

But I talked to TWS later and found that he found the taste was "fake" too. BUT he had eaten a chicken sandwich, not the nuggets. Again, neither of us are health food nuts in the least....in fact, there was a time of my life not too long ago where I thought poptarts should count as fruit (I was a big hit at the la leche league meetings lolol). so this is not "I am too good for McDonalds" but "Weird, wonder how long that has been going on and why I did not notice it before what exactly *AM* I tasting? Is it bad for me?".

As for the air bubbles in the tummy, I do not know about that either. TWS used to get indigestion when he ate burgers at Mc D's but never chicken. I am not allergic to much, and we eat fried foods quite often. In fact, fried tastybird chicken tenders and ore ida tater tots that I had had a few days before neither tasted fake nor inflated me like a balloon. So it is not that my eating habits are just SO healthy that my delicate system was not used to fried foods....we are from the south, we deep fry as much as we can!

This concerns me. Not the air bubbles, that could have been from hormones or whatever, but the fact that I could actually taste something that was not food. I wonder what it was, I wonder where they make their breading for their food, i wonder where they get the chicken and potatoes. I know that they, as well as most other food vendors or companies, use a company that makes fake food tastes. I read a VERY interesting article about it. They can make a million different tastes and smells from chemicals. I am not saying that the chemicals are all harmful, though I have no idea what they are. I am just saying that we might want to be careful about how much non-food items we eat.

I mean, surely it is not too much to ask that, when you buy food, that ALL the food is ACTUALLY food.

This also possibly answers why many kids only want fast food, no matter what sort of good homemade food you make. My fried chicken will never taste like fried chicken from places that do not use regular, actual food ingredients (I can even buy MSG, but I cannot buy the chemical flavorings that have been invented). It gives me pause to think about that.

Anyway, this is neither here nor there. Just thought it was so interesting, seeing as how I actually love chicken nuggets BUT after many months away from them, could very clearly taste something that seemed fake AND had tummy troubles as well.

I mentioned previously that I am trying to revamp my life (hey, nothing like biting off more than you can chew! hee hee!).

I had mentioned food, and, since most of us are foodies, and a fair amount of us dread the "what's for supper" question, I thought I would put what I am trying out....

In our family, when I am ill or weary, when the family is busy or the schedule is up in the air, or when I am lazy (blush), we have "Fend For" nights. That means "Fend For Yourself". I will nuke anything you need, but you have to decide what you are eating.

I HATE making decisions about what other people will eat. It is just a hangup of mine that I had developed without knowing it. Half of the time I have no idea what *I* want, and deciding what other people will eat is just dreadful for me. I know, it is silly.

So what happens is that I tentatively decide what is for supper, and then wait for TWS to come home and tell me if that is fine with him. He is not picky at all, but sometimes he has his own druthers about what he wants for supper. So that leaves me in a quandry--he will eat what I cook him, but I cannot stand to cook him something he did not prefer. Ramen noodles, anyone?

So we talked about this impass and we decided that I either need to make a menu (something I do not really like because I have NO idea what I feel like that day) or call him at 3 pm and verify. Well frankly the weekly menu provided the most benefits--I could plan my grocery list, we both have an idea of what we are having, and I do not have to make a decision EVERY day, just the one day where I make the menu.

I had written down all the dishes I know I make regularly, but then also picked TWO cookbooks and went through those. I have made the mistake before of going through tons of cookbooks, then be overwhelmed with the amount of recipes I flagged, so we just ate chicken tenders and tater tots instead hee hee!

This way I can try new recipes, then drop them if they do not work. Two cookbooks was manageable for me.

I am having "week" blocks of menus. My goal is to use left overs as much as possible, reduce the stress of decision making, save money by not buying food I do not get around to using, and be proactive instead of reactive.

I have two weeks of menus so far. I put the menu, where recipes can be found (recipe card, book and page, or "mine"--in my head, no written recipe), and any weird ingredients that I might not have on hand. The ingredients I put in italics so it is easy to see at a glance when I am making a grocery list.

I keep a stocked pantry (I think every woman should!), so I have staples.

I plan to add additional weeks of menus as well.

Now, I did not schedule any "fend for" or convenience or take out foods. I figure that there will always be days that pop up where we need to go the easy route. I am not stressing over being PERFECTLY on the menu EVERY day...the goal was to reduce stress, not be a slave to a printout! I showed it to TWS and he thought it looked great. He also thought it was good not to schedule easy meals, but to have them "waiting in the wings" for those days where we need them.

I tried to have a new recipe night, an involved recipe night, a moose recipe night, and bake a pie each week.

QUICK chicken and dumplings

A recipe for my beautiful, wonderful sisters!!

All of us are struggling with these allergies/cold/that virus we have had since last October (I kid you not)/whatever this is. Whatever it is, it seems to be perfectly at home in our sinuses, ears, and lymph nodes...much to our dismay. It has been going on long enough that we have developed a family cope: whoever looks/feels the worst automatically gets the extra sympathies for that day. When it is one of the kids, they get extra naps, when it is me, I get to not have to make supper, when it is TWS he gets cooing from me and last night he got QUICK chicken and dumplings....(I was in town most of the day and we do not have much chicken in the freezer).

Now, for REAL and PROPER chicken and dumplings, you take whole pieces of meat, with bone AND skin, and boil them in seasoned water until the meat falls off, then you pull the skin and bone out. But this uses canned chicken, canned broth, and homemade dumplings.

Now, before we get farther, we need to have a chat ;). There are northern dumplings (which might also be eastern dumplings--there seem to be some similarities in those regions) which are fluffy biscuit type things that rise to the top of the bowl. THEN there are traditional southern dumplings which do not have leavening, and are thick and dissolve slightly in the broth, making it more of a VERY thick stew instead of a soup.

(You might say "How does SHE know which is northern and which is southern?!? My southern grandma always made them fluffy!" Actually I googled it because I was curious! If you are a GRITS who eats fluffy dumplings, I PROMISE that no one will take away your membership to the Daughters of the Confederacy :-). Likewise if you are a northerner who likes dense dumplings, no one will toss you, shotput-like, below the Mason Dixon! :-) ).

Either way, this is how I made them last night. It takes about 20-30 minutes to make, maybe 40 at the most.

Expedient Chicken and Dumplings for 2 (possibly 4 if the kids are small and do not eat a ton lol)

1 or 2 cans chicken (dark meat gets less stringy than white, but either is good)
1 box LOW SODIUM chicken broth (or no sodium)
about a cup of AP flour
about half a stick of butter
Milk
Soy sauce
Pepper

Put the broth and the chicken (undrained) in a 2 quart pot and start to medium boil. Slice the COLD butter into very thin pats and put in the flour. Slide the butter in the flour between your fingers until you have broken it up some into dime sized pieces. Add milk to make a STIFF dough. Turn the dough onto a floured surface and quickly fold and turn about 5 times (you do not want the dough to fall apart too quickly). Roll to about 1/4 inch thickness and cut squares around 1.5-2 inches (it is not necessary to measure, you just do not want them narrow). Put in the boiling water but do NOT shake the excess flour off.

Add a splash of soy sauce to give "depth" of flavor. This is probably a tablespoon or three. Do not add too much, it is salty, BUT because we did not boil the bones and skin, there are "flavor notes" missing that the soy sauce adds.

Pepper liberally also while the dumplings are boiling.

Much of the dumplings will start falling apart--that is fine! You want a very thick, stick-to-your-ribs sort of broth. Start testing the dumplings for YOUR desired doneness at probably 15 minutes and checking every 5 minutes thereafter. It does not take long for the dumplings to be done.

WATCH THE POT! This is not one of those "fix and forget" type dishes. Because part of the dumplings fall apart, the starch will stick to the bottom of the pot and BURN! And it happens quicker than you think! Burnt flavor goes all through the pot, so it makes good sense to stir it occasionally and keep it cooking at just above a simmer. (I like to do dishes while it is cooking).

There ya go. Make sure that there is enough pepper to give it some flavor, if you like pepper. Also make sure to go LIGHTLY on the soy--especially if you have used full sodium broth. You can always add more.

This is like chicken soup--the pepper helps clear the sinuses, the broth adds hydration, the salt soothes and disinfects the throat and helps you hold on to water that you are probably losing from runny noses or post nasal drip or fever, both chicken and dumplings are easy on the digestion, and the hot, soft food is good on a sore throat or when you just feel punk.

Of course if you have the time, make the proper chicken and dumplings from scratch--much more nutrients from the bone and fat, and frankly the flavor is better. However, this is a good quick meal.

Random thoughts for Tuesday....

Just a few musings....



Anyone wake up every night at about 3 am? I do. Lately it has been pretty frequent. I had mentioned that this was happening in my post about focusing on the Lord, but the past two days I am still waking at this hour. THANK THE GOOD LORD that I am not waking in fear, or from a nightmare. I wake, feeling pretty much fully rested, and stay awake until about 4-5 am, then fall back asleep.



I have read several theories as to this, but there are some that make more sense:



1) Depression. TBH I am not the LEAST bit inclined to depression. Anxiety, yes (in fact the Lord had to lead me out of crippling anxiety). Depression, not in the least. If I am down for more than two days in a row SHAW is about ready to have an intervention with TWS.



2) Falling levels of cortisol due to the low point of the circadian rhythm....or something like that. This does make sense. Asthmatics will sometimes have problems at this time of night. Your body will rouse yourself to start producing more of the chemicals that it is lacking



3) Bimodal sleep patterns. This makes the most sense of all. Apparently some researcher took over a dozen volunteers and set them to what light would be occuring during winter in a latitude around Washington DC. After the first night (where the participants slept 11 hours making up sleep debt), they settled into a routine that is markedly different from our norm. They went through periods of "quiet rest" where they were awake, alternating with plunges into REM sleep. This intrigues me. I think that might be it. Our season is changing RAPIDLY into fall and there is a marked decrease in light levels. Or it could be the circadian rhythm thing.



In either case, that leaves me with a bit of a dilemma--I LIKE rising early! I enjoy getting up around 6 am after a complete night's sleep. I find that I am rising instead around 8 am. So either I find quiet, yet productive, activities at 3 am (unfortunately, most of what I like to do would probably wake others--like sew, etc), or I try to find a way to stop this pattern.



What I think I might try is a "reset". On the VERY off chance that this is a symptom of mild depression (though I am eating the same, not crying, very interested in activities, etc), OR if I just need a "reset", I am going to try to pick a night to stay up all night. This works with some people to stop a period of depression, and it might reset my circadian rhythm.



Or....I need to find some of y'all who have yahoo instant messenger who might be up at untenable hours to chat with! lolol





Another note: wanted to send my very best wished to the most wonderful art teacher (and friend!) we could have. I hope you feel better soon sweetie! (though I have to admit that it bugs the mess out of me that you were feeling SOOO under the weather and yet still looked so blasted beautiful! :-) When I am sick, as the Col would put it, I look "like I been et by a wolf and pottied over a cliff"!).





OH and another note! I am excited to try my version of frozen pizza this evening! I made it last week and it is cooking in the oven now. We will see how it goes!

Putting some by!!!

My sisters, loved by God!

Our ancestors knew the wisdom of "putting some by". It is wise to gather in times of plenty, so that there will be provision in times of leanness. For example, I have a friend who stored many dried goods, canned goods, toiletries. That became invaluable when her husband lost his job and was out of work for almost a year! Having food on hand means you can save a GREAT deal of money. Plus, I just love the feeling of having TWS say "Are we out of xyz?" and being able to go to the pantry and grab another box or bottle! If we get sick (you know how the flu will go around a household with children!), I do not have to try to drag out, infecting everyone in the store, to get tylenol or tissues. If an unforeseen expense comes up (for example, a tire blowing or an appliance breaking), we can use my grocery money for that without batting an eye. It is also wonderful to have extra during times when you know things will be more expensive, such as during Christmas, or vacations.

Plus, we can see how, if we had bought extra flour, for example, last winter, we would be able to avoid the high prices right now!!

Let's use the summer to store food for the winter. Buying in season is more healthful, cheaper, and frankly the food tastes better!

We do have wild blueberries up here, but the summer has been a bad one for berries. I bought blueberries that had come out of Canada, and the strawberries were my own.



This picture is of the berries after I have washed them, put them on saran wrap on cookie sheets and frozen them. The white on the strawberries is ice :-).


These are the bagged, frozen fruit ready to be vacumm sealed, baked into goodies, dehydrated, or canned at a later time (frankly, they will probably just be put on pancakes or in muffins!). If I am diligent about gathering produce in the summer, and frugal with its use in the winter, it generally lasts me until the next summer. I have done this with everything from collards to watermelon (the watermelon is PHENOMENAL!).

Please consider "going to the ant" and taking the time now to can, dehydrate, freeze, or juice the wonderful, fresh, local produce you can get. We trust in the Lord to take care of us, but part of that care is being diligent in the provisions as they come (something I mess up sometimes, unfortunately!).

Random thoughts...

My beautiful Sisters in Christ!

We all have times in our lives where time seems to be creeping at a snail's pace, the sky is grey, the routine is blah....what do you do when that happens?

There are times where life is not bad at all, it is just very....plain. Which is DEFINITELY good in many ways! But sometimes we just get that feeling like after we have taken a nap too late in the afternoon--kinda groggy.

I must admit, I am having one of those days :-). The week has been a rather stressful in some ways, but has been a blessing in others. TWS has been working dreadful hours, but I am grateful that he is working! Our fuel oil and gas are unutterably expensive, but our legislature just passed an emergency fuel bill that will give each person who is eligible for the PFD a check for $1200!!! What a mercy from God!

It is just sort of a slow day, and I feel a bit like I am waiting for a bus after traveling for many days--kinda weary, kinda restless. :-)

I have been following the Russia/Georgia mess online. I am amazed, and sorrowed, that the affair of a political person takes precedence over a potentially explosive situation. I wonder what our society is THINKING. On foxnews.com, their top story is a group of peafowl (peacocks) that are bugging an affluent Florida neighborhood. I just must wonder why this is such a big news topic as opposed to the conflict that might spill over into something bigger.

Ah, let's think of something else for a bit! I made homemade pasta today. I used flour, powdered eggs, salt, and water. I have a pasta rolling machine, but to be honest I have never really been able to make that work. The other day, however, I found a simple little pasta cutter with about 6 cutting blades set close together. I just roll out the dough and then roll that cutter through it. I READ that some Italian mothers placed a clean sheet on the bedspread and spread the pasta on there to dry.....I just used a wire rack. I am not sure how I would explain raw pasta on the bed.


I have been training the cat....this one

He is such a goof ball. He likes to be on his back more than any cat I have ever seen!!! He will go to sleep if you cradle him like a baby! And he gets grouchy if you try to actually click the mouse instead of petting him to sleep with BOTH hands...what a maroon! :-)

This is Little Man holding the cat...he likes to be held on his back and then SSTTTTRREEEETT CCHHHH. I cannot imagine how good that must feel! He does this almost every time we pick him up.

Anyway, this cat has one REALLY bad habit (well besides his ambush attacks on bare ankles, and his occasion "Kitty from above!" jump to tag your shoulder)...he likes to bolt outside of the door. He is an indoor kitty--it is really too cold here for him to be an outdoor kitty, plus I like having an indoor cat. He is getting bolder in his runs out the door--he used to stop right on the porch, but now he is tearing around under the deck. (though last time he escaped, it was during the recent rain. He is not fond of water, and ran right into a puddle that was up to his ankles! He just stood there immoble, probably thinking "Oh NO! What do I do now, everything is WET!". lol)

He is VERY hard to catch when he does that, so I knew it was time to train him like I trained the other cats we have had. I would give them wet cat food when I say "Heeeerrreee kittykittykittykitTEE". They learned to come IMMEDIATELY when called, which has saved us from many a lost cat, and has made it so I do not have to try to fish them out from behind some piece of furniture. Last night I started his training and he picked up QUICK! So now maybe he will not run off if he gets out. I HIGHLY recommend this to anyone who has a cat or a dog--a special call that they think means the very best of treats. (frankly *I* would come running if someone waved a donut and called "HEEEERRREE SparrowsparrowsparrOOOH!!")

Anyway, back to our original thoughts...what do you do when you are having a grey day? Nothing is wrong, blessings are abounding, but you just feel a bit restless and unmotivated at the same time? :-)

Yeast bread baking tips

My beautiful sisters!!!
Today I thought I would make a post regarding bread baking. Our summer is pretty much done, and it seems that bread baking is just the perfect post for a rainy July day!

I do not know how much y'all bake, but I cannot encourage it enough! It takes a few tries, but the reward, in cost, flavor and health, are MORE than worth it. It is not hard, it just takes a bit of practice. At some point I can post an entire start-to-finish process if y'all like, but I thought this time I would offer tips to make this process easier.


Bread can be made with only four ingredients: yeast, water, salt, and flour. Nothing else is required to make bread. However, when you make bread with only these four ingredients, you need to incorporate time in order to fully develop flavors of bread.

However, if you are starting out, creating that sort of "artisan bread" can be a bit daunting. I am still trying to learn how to do it! So let's start with an enriched bread.

In enriched bread, you add ingredients for flavoring and for conditioning the "crumb" (making it more soft and sponge-like and less crumbly).


First tip: Convenience! This works for any recipes that you use often enough to use, but not often enough to commit to memory: tape them to the inside of your cabinets! I have my top bread recipes printed out and taped to my "baking cabinet". In my baking cabinet, I have my recipe box, measuring cups, various flours, sugar, baking soda, etc. It does not have all my baking items--they would not fit. But most of my items are right there :-)



Second Tip: Salt. Do not forget the salt or omit it. It makes the bread taste terrible and is necessary for the yeast to work correctly. I have tried it before (on accident). If you are on a salt restricted diet, ask your doc, but the amount (usually 1-2 tsp) is so small when distributed throughout the whole loaf that you are not getting very much at all.


Third Tip: Powdered Milk. This gives bread a creamy, smooth texture and mouth feel. It is truly amazing what it does to bread. I usually put two to four of these heaping soup spoons in my bread recipe.

Fourth Tip: Oil. Oil also makes the crumb smooth and the mouth feel pleasant. I use butter at times, which is wonderful, but I find that the extra light olive oil works wonderfully.

Fifth Tip: Wheat Gluten. I cannot TELL you how much this changes the crumb of the bread from crumbly to smooth and elastic. It is particularly useful for whole wheat breads, where the wheat grains tend to tear the strings of naturally forming gluten in the dough. Adding extra gluten keeps bread from being crumbly. Different flours have different amounts of gluten already in them. The "bread machine", "artisan" and "better for bread" flours have higher amounts of gluten. "Pastry" flour has lower amounts, it is made with soft winter wheat instead of hard wheat. We do not want gluten when making pie crusts or biscuits as it makes them tough. However we DO want gluten in making bread--it makes them airy.

You can also get wheat gluten in bulk. It is MUCH cheaper. Safeway's bulk bin where I am carries Bob's Red Mill in their bulk bins (which is funny because the Bobs Red Mill in the baking section in boxes is VERY expensive, but you can get the same thing cheaper in the bulk bins!). I buy quantities of it and keep it in a rubbermain container in my fridge.



Sixth Tip: WETTER IS BETTER! This might be the most important tip of them all. I learned it from SHAW when she worked at a bakery. Dry dough means a dry bread. Wet dough means a moister bread. If you have been making "bricks", this is probably why (though another reason can be that the yeast is dead or killed with too hot of water, or that there has not been enough gluten development).

The top picture is dry dough. You can see the flour that still needs to be incorporated, and the dough looks and feels stiff. It is not smooth, but rather like chunky oatmeal.


This second picture shows two things: a wetter dough and some gluten development. Gluten is a protein found in wheat, and it creates long strings which form sort of a "web" to trap the gas bubbles that the yeasts are creating when they digest their food. When you have good gluten development, you can trap more gas. This creates a more airy texture and a pleasing mouth feel. Dry dough prevents good "netting", creating bread that is tough, dry, crumbly, dense, and heavy. This is really a pretty wet dough and you can have a slightly drier dough, but it is better to err on the side of wet than on the side of dry.



Seventh Tip: Forget following the recipe exactly! Now, the thing with breads is that they are very forgiving in some ways--you can add and subtract ingredients with almost total abandon. HOWEVER, the problem with bread RECIPES is that they are only a GUIDE. If you are a strict recipe follower, you need to probably get out of that habit with breads. The problem is that different brands of flour, when and where it was packed and stored, and your house humidity GREATLY affect how much water your bread will need. In dry climates, during a dry day, adding other dry ingredients, or using a whole grain flour will require MUCH more water than flour that is already holding some water from the air. Rely on FEEL, not on recipe amounts. You can always add a little more water or flour to create a damper dough.

Eighth tip: do not overproof your bread. That means when you are letting the bread rise for the second time, do not let it go "just to see how big it will get". It will look big and beautiful and incredible until it is baked...then it will sink and sag like a depressed mushroom.

Ninth Tip: Buy yeast at a warehouse club. Yeast is mind boggling expensive in regular grocery stores compared to warehouse clubs. I can get two pounds of yeast for LESS than I can get a few ounces in a jar at the grocery store! They are vacuum packed and have lasted on my shelf for years, unopened. Or you can store them in the freezer. I refrigerate mine when I open them.

I am sure there are many more tips that I can think of, but this will get us started anyway :-). I am considering going through various "easy to make, but looks hard" things that can help us create healthier lives for our families and save us money as well. Reverse calorie counting and other tips...

Because I cannot sign my name in less than three pages (chuckle), the last post got too long. So this is sort of a "part two" of the last post. I want to talk about how we can "detoxify" ourselves, purge society from controlling our thoughts, and learn to think properly about weight and food.

Now, a couple of tips!

1) Focus on the Lord! If you are overweight, ask His guidance to make you healthy--that might not mean you lose an ounce! It might just mean that you need to make your arms strong for your tasks as the Proverbs 31 woman. It might mean that you are eating the wrong foods or not getting enough sleep.

Draw closer to Him until His peace descends on you. Lay everything, every sin, every pride, every fear, every sorrow, ever resentment, every happiness, every thing at His feet. Give everything to Him, and allow Him to fill you with His Spirit. TRUST HIM with the things mean the most to you--that means no more fretting, but trusting His Wisdom and Power.

2) Be conscious of your eating. Are you REALLY hungry? If so then eat! Are you just "munchy"? Then stop eating and try drinking water, coffee, tea, milk (even chocolate!), juice. NOT cokes and nothing with chemicals. If you drink something and at the end of the glass are still hungry, then eat.

3) Learn to identify that "denial craving" vs real hunger. My personal bad times are at supper--I WANT more for supper. But the thing is that I am not actually hungry, I just REALLY REALLY REALLY crave an extra slice of garlic cheese bread or another helping of noodles. (Amazingly enough, I never crave an extra helping of vegetables lolol.)

Anyway, that craving will get so intense that I am irritable that I am not having what I want. THAT is not hunger, that is the flesh--I want what I want when I want it!!!! THAT needs to be denied, whether it is a nap, an extra biscuit, to let a cuss word slip, whatever. Everytime you feel that pressure in your chest (maybe to post something on a board), or that desperation to get a nap, that irritation at being denied or interrupted, THAT is the flesh. Do NOT give into that feeling!!!

**Point of note--each time you deny your flesh in one area, it can help you learn to deny it in others. Be diligent about recognizing the feelings you have, whether they are godly or not, and take every ungodly impulse and deny it.

So how do you deny it? Well, in the case of me and an extra helping, I just tell myself "Put your plate in the dishwasher, go do something else. If you still want it in, say, 20 minutes, then go have it.". I almost NEVER want it in 20 minutes--it was not hunger, it was craving. It was my flesh, not my tummy. (truth in advertizing here--I am REALLY not all that good at it. I know what it is, but give into it WAAYY too much. lolol).

Now, as the dishwasher in the family, that allows me the opportunity to eat that last bit of pasta, that last onion ring, that last scoop of rice, that last bit of meat. I am putting the food away in the fridge, it is easy for me to say "Well, I will leave a little bit and pop that in my mouth while putting the pot away.". Fight this! This is not food you need, it is food you want. When I am good, I recognize this and scrape as quickly as I can because if I leave it, I WILL eat it!!!!

4) GET ENOUGH SLEEP. When you do not get enough sleep, your body will crave calories (It has to get energy from somewhere!). Get good rest, wake up at the SAME TIME every day, even on the weekends (sleeping in on the weekends messes with your circadian rhythm). Now, you might be tired, so go take a nap LATER in the day (not too long, 30 minutes is supposed to be pretty good) and then make sure that you go to sleep earlier so that you can maintain the same wake time. If you are sick, of course, sleep more, your body needs to heal.

5) Eliminate junk from your diet. No, I am not talking about eating only fruit juice sweetend, whole grain cookies with carob chips! I am talking about FALSE FOOD--food that is not real, food that is more chemical than food.
-Find meat that is not filled with hormones or antibiotics.
-Get produce locally, not shipped from Ecuador. Stock up on produce in season and freeze it or dry it or can it OR just eat the produce that grows in your area duing the season.
STAY AWAY FROM artificial sweeteners unless you have a medical condition that REQUIRES it.
-Stay WHOLLY away from high fructose corn syrup--it is poison, IMO. We even make our own pancake syrup--SUPER easy and cooks while you are there cooking the pancakes anyway, so it is not really much of an extra step. AND it does not have HFCS.
-Stay away from partially hydrogenated oils--it is better to eat butter than to eat chemicals, again, IMO.

6)Make your arms strong for your tasks, as per Proverbs 31, by DOING THINGS. How long have you sat at the computer today? (I am not calling the kettle black, I have been posting all morning!). TURN OFF THE COMPUTER (well, finish this post THEN turn it off ! hee hee!). Get up and get moving. If you are on the phone, empty the dishwasher. Get off the phone and take the kids outside. If your house is a mess, the computer and tv should be off. If your house is clean.....you are a better woman than I am! lolol.

Seriously, whether you are thin or regular or overweight, get off the computer and away from the tv and do something. Unless we are actually disabled or sick, we all should be able to keep a VERY NEAT house.

You know, this is something that I struggle with too....maybe we should have a special post about accountability and see if we can get some serious homemaking going here! :-)

(Why wait? Let's ask ourselves right now
1)How much time (honestly) have I spent on the computer today?
2)Is my house neat and supper planned?
3)Have I spent time with my Lord? How much time?
4)Have I spent time with my children? How much time?
5)Have I spent time with my husband, or do I have plans to do so? How much time?
6)What work have I done today?
7)What are three tasks I can be doing right now?
TURN OFF THE COMPUTER AND DO THEM!!!! :-) )

7) Create special moments and routines. For example, instead of having dessert, have an after dinner coffee. Instead of grabbing a bowl of chips, have a cup of tea and a piece of bread with butter or jelly. While we do not want to overemphasize eating, making a blessed little "moment" with our children, husband, or Lord is wonderful.

8)Put society on mute. Rely on the Lord and your husband for good feedback, not society.

9)Reverse calorie counting. This is something I really enjoy because it rewards self control immediately, not makes you feel guilty or deprived:
Instead of counting up what calories you are eating, count up the ones you REFUSE. If you normally have, say, 2 tsp of sugar in your coffee every morning, then one morning do not have those and put 30 cals on your list of "refused calories". That is 30 cals you did not need! For me, it makes me feel more in control because *I* am doing the decision making, and *I* get to see, on paper, what the results were.

For example, last night I really was going to have a bowl of ice cream. But I waited until the craving past (NEVER EVER eat "denial cravings", even if you can. Allow that to pass--usually takes about 20 minutes--THEN you can eat. You master your flesh, do not let your flesh master you.). So 1 cup (probably more, but lets pretend I only eat one cup of ice cream at a sitting lolol) of this ice cream plus chocolate sauce was approx 400 cals. If I avoid ice cream that I would have eaten every day for a week, that is 2800 cals!!!

I did NOT refuse to eat extra garlic cheese bread and ice cream and coke the other night that we had for girls night. If I had, I would have saved myself about 1200 cals...just from one night!

At the end of the week, you might find that you avoided a whole pound of extra weight! Maybe more! You can see on paper the results of your diligence, and then at the end of the week, you can see how much worse off you would have been (AND you would have seen that you did not die or suffer because you did not have extra food!).

Now, there are a couple of rules to this deal for it to work. First of all, you have to have habits to your eating. You have to know what you normally would eat. If your eating is all over the map (no food one day, 5000 calories another) then this will not work.

1) It has to be something that you really were going to eat. You cannot go through your pantry and say "Wow, there are 15,000 calories in this sack of flour that I am not eating!" lolol.
2) You have to make sure you do get enough calories to keep you healthy. Do not use this to go below the 1500-2000 calories that a healthy woman needs. This is not a race to the finish, this is a lifestyle change.
3) DO NOT count the calories if you use a chemical to replace it!!!! Putting aspartame in your coffee instead of sugar does not allow you to count the sugar. Why? Because even though you are not consuming calories, you are replacing them with things that are not actual food, but rather chemicals.
4) Do not count things that you do already. If you already eat ice cream with no whipped cream, do not count whipped cream that you really could have. This is about what you normally eat OR what you are honestly about to eat.
5) Do not count calories that you replace with other calories. You cannot say "I did not have this 300 cal piece of pizza" and then eat a 300 calorie plate of nachos.
6) You CAN count the difference between choices. For example, if you did not eat that 300 calorie piece of pizza, but you did eat the 60 calorie bowl of fruit, you can credit yourself 240 calories.

You can also use this in reverse if you need to gain weight to be healthy--a reverse reverse calorie counting! Instead of what you do not eat, of course, you write down what you would have avoided, but didn't. You can use this for everything from exercising to to do lists (for example, I write down what I DID do in a day. That helps me be productive).

I am not saying that this reverse calorie counting is a whole way of controlling yourself, it is one tool to use to take some of the negative emotion out of eating sensibly.

Weight and Beauty

I have been thinking about weight and food lately. I think that we are obsessed with weight in ways that are not healthy. We have put emotions into food, so that we are not eating correctly. Not only that, but our society equals weight with worth--if you weigh too much, you are worth less, if you weigh too little, you are worth more. We have lost balance and focus. We are either obese or anorexic or just stress constantly over every flaw.

Ironically, I think it is the focus on too little weight that has caused a great deal of weight gain in our society (well, that and foods that have chemicals). We look at a model in a magazine and see how "pretty" and thin she is (mind you, most men do not like that look....the models are for women, but most men prefer a little meat on the bones), and then we feel badly about ourselves. So then we either decide on a severe diet OR we feel badly and go eat ice cream. In either case we are choosing our food out of emotion NOT out of hunger or lack thereof.

I saw a magazine cover in the rack at the store that had a picture of an actress. The article was, if I remember correctly, 10 beautiful bodies. I had two thoughts when seeing that girl in a bikini on the cover: a)Her ribs poked out and her arms were so thin that if I saw her on the beach, I would think she had cancer or some sort of other wasting disease. She looked wasted away, not fit.
b)What little bit of flesh she had was on her tummy. It was a tiny little pooch, but honestly, her tummy was the healthiest looking part of her!

I found it odd that what the magazine was calling a beautiful body was, honestly, very similar to what I have seen in cancer patients. She was no fatter than those pictures circulating around about Barry Manilow. Him, they are saying is sick, her, they are calling beautiful.

Ridiculous.

I have also seen the reverse of this--seriously overweight women. This is not healthy nor good. Where I live, most women I see are overweight and some are obese. Most of them look very uncomfortable, and I cannot imagine how painful their knees and feet get. I wonder if they realize that they have beauty, or if they spend their days obsessing over their food, their weight, denying their husbands because they do not feel pretty or desireable.

Both cases are, in my honest opinion, in need of fixing. Here are some ideas:

1) We need to start putting God in His rightful position--He is our comforter, not a quart of mint chocolate chip. When we are angry, we need to come to Him, not to our cookie jar. Bad days, stressful days, sorrowful days, boredom mean we need something OTHER than food.

When we focus on Him, I mean REALLY focus on Him, we get clear vision. If you have not experienced this, let me urge you to make this a priority. When I focus on the Lord, burdens are weightless, stresses are eased, peace flows through me, my insecurities are GONE.

Now, the problem is that it is easy to STOP focusing on Him. I mean, in the space of a minute, we can start living in our heads again, instead of keeping our eyes on Him. So we have to keep our focus on Him. If we do not have peace, if we do have anxiety, if we are fretting, then we are not focusing on Him. He is our comforter, our ever present help.

2) We need to start putting food in its rightful position--it is our sustenance. Eat to live, eat out of joy in celebration, use food as a hospitality and service to those who are hurting and in need (we southern women know that banana pudding is required at every celebration or tragedy), but also know when it is best to push the plate away.

3) We need to start putting society in its rightful position--behind us. We are IN this world, not OF it. Beauty in society changes like the wind. Sometimes the voluptuous is in, sometimes the boney look is in. Society is fickle and ridiculous. Do yourself a favor and STOP looking at any magazines, shows, catalogues that show tiny little women if you are struggling with your weight. Believe the Lord when He told us where beauty REALLY lies--in a quiet and gentle spirit.
(I don't know about you, but when I am fretting about my weight, the LAST thing I am is quiet and gentle. I focus on ME and MY wants, not on my family and what they need. I am either grouchy or morose, my day is dictated by my scale, not by my Lord. I am in error).

4) We need to start putting our daughters in their rightful positions. We need to start praising their kindness, their gentleness, their motherly qualities, their sisters-in-Christ qualities. We need to bring them home, take them under our wing, RAISE THEM, not just babysit them. My friend has decided to homeschool for several reasons, but I believe the straw that broke the camel's back was when her B-E-A-U-T-I-F-U-L daughter (physically, spiritually, mentally and emotionaly) took the comments of a "friend" to heart and decided she was too heavy. Now let me tell you, that child was NOT too heavy--in fact, she was lithe and althetic. But you know how girls are. So she believed a lie instead of the truth. If we, as 20,30,40 something women raising daughters cannot distinguish between truth and lie, how can we possibly expect a child (with no age, wisdom or perspective) to distinguish between the two? One careless comment can live in a child forever. Bring them home, teach them the truth.

5) We need to start putting our husbands in their rightful positions as our mates. I hope this is not too forward for a Christian woman's blog, but our husbands are our MATES. What do mates do? They...um...mate!!

I have gone through times where I did not FEEL beautiful, did not feel attractive or "mate worthy". Amazingly enough, RTWS did not seem to care that I needed to lose weight, was not super toned. Honey, if your husband wants you, it is because he WANTS Y-O-U. He wants intimacies with YOU. YOU YOU YOU YOU YOU YOU! That is because YOU turn him on! The Lord created men like that. The Lord did not create men to only desire the youngest hot thing on the screen. Nope. Your husband is not "settling" for you--give him more credit than that!!!

I was talking with SHAW yesterday. Her darling husband is out of town on business She remarked how she did not feel very attractive lately. Now, I know her husband, he is one of the kindest men and he loves her dearly. I realized that part of her problem is that she is not getting that constant positive regard from him. He is not there to tell her she is beautiful or to desire her. So she is missing that. Women, if you want to feel beautiful, start making love to your husband.

Ladies, stop obsessing about your weight in the boudoir. If he wants you, it is because you are want-able!!! He is not settling, he is not resigning. He WANTS you. Give yourself over to him freely and see yourself through HIS eye, not Vogue's eyes. Trust him when he says you are sexy, beautiful. Be enthusiastic and willing and adorable for him. Buy something sexy and put it on his pillow for you to wear for him later. Flirting with your husband, being coy and adorable and desiring your husband, making him the star of the show, being willing and confident erases wrinkle and pound. Lure him to your private garden. Read Song of Solomon (sometimes called Song of Songs in some Bibles), and understand that the Lord created intimacy on purpose for bonding and loving. He could have had us procreate like salmon or mushrooms, but He created us to ENJOY each other. So do it!

Denying him is unfair (just because YOU do not like your body, why make him suffer? He has no control over how much you exercise, how much you eat, how much you watch models, how much you overthink things, so why should he be denied from something he wants because of things in your head?)

Denying him is dangerous (you keep talking yourself down, that turns him off, refusing him turns him off), and hurtful to him (being refused without a REALLY good reason, like a fever or throwing up, undermines his self esteem. You say it is because you do not like the way you look....but HE thinks you look fine. So his reality is NOT your reality. Being denied physically is a sure way to cut a man down, to make him feel inferior, to make him go looking for someone who wants him. You do not have to find YOU sexy in order to be sexy to him, YOU are not making love to YOU! You are making love to him.).

It is also unbiblical to deny each other, except for a time so you both can PRAY! The Word is SPECIFIC about not denying our husbands. The Lord knows exactly what we need. He created sex, He expects us to use it in the context of marriage! So, yes, it is unbiblical to refuse your husband!

I will clue you in on a secret that I have heard men say: they care a lot more about being desired, esteemed, respected than about looks in a woman. The most beautiful woman who is cold or self centered or derogatory is not nearly as SEXY as a plain woman who is confident, loves her husband and desires him. You will be more sexy to him by giving him one compliment than you will be by losing weight.

Ok, one last comment, and I will stop harping on this: when you indulge him, you will feel more beautiful. You will feel powerful and sexy and strong. Whenever you feel low or with low self esteem, go to your husband and let him adore your body. Let him show you how wonderful you are to him.

6) We need to start putting our bodies in their rightful positions--COVERED! Now, this is going to be impossible for society, I am sure, but it would be wonderful if women stopped running around half naked. I believe that when we can see EVERY SINGLE INCH of skin, save three triangles, we get an unrealistic view of what a woman should look like--THEY do not even look like that, they are airbrushed and washed through a computer.

In fact there are several youtube videos where people have taken photos and photoshopped them until the women are 50 lbs thinner, 10 years younger, have a completely different smile, bone structure, coloring. THIS is what we think is beautiful--computer generated images. Watch some of these, then understand that your feelings of beauty and worth are being shaped by lies and deception. (warning, some of the comments are filled with horrible language on some of these videos, and some of the videos are inappropriate. The dove one is great and there are a few others, but be careful!)

Yes, we can stop looking at other women's bodies. They might flash it, but we can ignore it. We can train our daughters and sons to ignore it too--they will be tempted to either desire it or compare, but we can lay the foundation of where real beauty is found and diminish some of the arrows of the devil.

I have to tell a funny story here regarding that very thing. We have taught our children that our bodies are personal, to be covered, to be modest, to be shared with no one but our spouses. When there are commercials or shows with immodest women or men, we change the channel (are you listening networks? we CHANGE THE CHANNEL!).
Anyway, we told the children that it is "tacky" for a woman to display her body in public.

One time we were watching football, I believe, and I left the room. My son was....6 or 7 at the time and my daughter was 9 or 10. Anyway, I did not see that a very tacky commercial came on the tv, I just heard my son say "Cover your eyes peekie, its tacky!". I go to the living room and see my daughter hiding her face and saying "Is it over yet?", and my son staring at the tv saying "No, not yet" while looking at this scantily dressed woman!

I have to appreciate him protecting his sister, but needed to review that he should close his eyes as well! lololol

It is terribly ill bred to show off ones breasts and buttocks or to attempt to entice every man on the street, not to mention it is robbing our husbands of their private garden, by allowing other men to peek over the fence! I fully and shamefully admit that there have been times in my life where I wanted to be found attracting (not attractIVE as in well groomed and presentable, but attracTING--I wanted to be desired) to men--I wanted men to want me! I thought that is where I would get validation, would feel pretty. I would not allow men to have me, but I wanted them to want me. Oh what HORRIBLE vanity and pride and sin I was allowing to reign in my life!!!!!! :-(

I believe this is a greater spiritual battle than we give it credit. When we focus on our bodies, when we do not master the effects of hormones, stress, media images, food cravings, desires, insecurity, etc then we are probably either going to be severely over weight or severely underweight. Even if we manage to maintain a healthy weight, we will be without joy because we cannot get joy focusing on ourselves, no matter what the reason or cause. Joy does not come by focusing on anything but the Lord.

Oh sisters this is getting REALLY LONG. I have so much more to say! So I think I will leave this for now. If there are any discussions, any questions, any refutations, feel free to leave them. Start TODAY to look to the Lord. TODAY make yourself presentable and then present yourself to your husband! Ask the Lord to help you see yourself through His eyes, and to develop those truly beautiful traits in you.

Coffee....

Beautiful Sisters, I am glad you are here!

I was making coffee the other morning and thought that I might show y'all the beautiful coffee grinder that Wonder Sweetie made for me.

It is mostly cast iron with a guamanian ironwood (whatever that is) base. You cannot see the details very well, but the wood is very pretty--good grain with speckles.



The part of the grinder with the pretty flower on it pivots and you place the beans in there. A few turns of the crank and .....


VOILA! Ground coffee! Wonder Sweetie actually buys green coffee beans and roasts his own, but he and I have different coffee tastes. I like mine medium roast, and he wants to be able to be able to taste char ;). Really, when what you brews smells like "grill" instead of "coffee", then you KNOW that the coffee is going to be strong and probably bitter. :)

I got into coffee late, which is surprising considering my family. I do not know if it is a Louisiana thing entirely, or just a region of Louisiana, but our family drinks a tremendous amount of coffee. We drink it morning, noon, and night. If someone calls to come over, we say "I'll put a pot on.". Or they might not ask to be invited, but say something like "Make sure the coffee is ready." hee hee! I love that.

Our family never really seems to get too jittery with coffee (I have on occasion, but not often). If I make instant (ew) or use the carafe, I use french onion soup bowls as my coffee mug. My favorite coffee is black with a fair bit of sugar :). It is like a dessert to me.!

Anyway, when I was a wee bairn, I got a hold of my mother's coffee cup that only had some grounds and about a tsp of cold coffee in the bottom and downed it. EEWWWW!!!! I was VERY VERY young, but I can see that whole moment clearly in my head. I think it is probably my earliest memory.

So I did not touch coffee until I was about 30. Then we moved to Alaska. Now, when I say that people here are bonkers for coffee, I do not think I can adequately convey the DEPTH of their bonker-ocity. Here they have little shacks (that generally do not even have running water) that they sell coffee out of. And they have them EVERYWHERE. You cannot swing a soggy teabag without hitting one. There are at least three in two miles just from my house and I do not live in a highly populated place. If you are lost in the tundra, hours away from the nearst town, somewhere a satellite phone will not even work, just look for a coffee hut--chances are you are only a stones throw away. They are manned by adorable young women with big eyes, open smiles, and infinite patience for those of us who have trouble remembering if we liked whipped cream or not in our mocha. I had one girl even put together a special type of mocha for Precious.

Oh, yes, that is right. Precious will enjoy a bit of coffee. Again, down in La, they have "cafe au lait" that they sometimes give to the children, so we occasionally give her a bit of mocha, just to keep a bit of Louisiana with us, especially when we have beignets. :)

(honestly, I think the people here are so crazy for coffee because not enough of us have auto start on our cars....so we buy or bring coffee on the way to town to keep us alive until the heater kicks in!)

Wonder Sweetie, who is a man with an eye for gadgets, found these press mugs for us. We also have a pot made by this same company. I use mine every day and love it!

Additional coffee musings.....

Chicory is an additive to coffee, especially in Louisiana. Cafe du Monde (one of the tourist hot spots for beignets) sells coffee with chicory. It's pretty good, try some.

The part of chicory used in coffee (either as an additive or a substitute) is the root. You can also eat the leaves, apparently.

Chicory is closely related to dandelion, which has also been used as a coffee substitute (and is one of my favorite plants--one of the most useful that the Lord placed on the earth, IMO).

Coffee is increasingly being found to be good for various things: reduce parkinsons, diabetes, cirrhosis, help with asthma, mood, and we were told to give Precious caffeine if she gets a migraine. http://men.webmd.com/features/coffee-new-health-food

If you want REALLY good coffee get Community Coffee. I am not sure what they do to it, but it is nummy. I do find that Eight O'clock will do when I do not have CC.
